Watermelon, Basil, & Mint Summer Salad

It may be the heat outside but currently all I want are fresh, cooling salads like this one with watermelon.  It’s a great side dish that looks impressive but is super easy! I made it for a small dinner party and it was a hit 🙂

You’ll need the following ingredients:

  • Watermelon (can buy it already in cubes for a quicker prep)
  • Yellow tomato
  • Red tomato
  • Basil
  • Mint
  • Cube of feta cheese
  • Baby arugula
  • Sliced almonds

Since I had to take the salad to a friend’s house, I placed it in a travel safe container that the host can just discard afterwards.  I arranged baby arugula at the bottom and placed the mixture of chopped tomatoes, watermelon, basil and mint on top.  Then, I lightly crumbled and sprinkled the feta cheese all over.

I then quickly toasted sliced almonds just for a couple of minutes constantly moving them around so they wouldn’t burn.  Since I didn’t want the almonds to get soggy on the way to the dinner party, I packed them separately and sprinkled them on top of the salad once I was there.

IMG_3276 The toasted almonds were a nice crunchy addition to the salad and the nutty flavor helped balance out the salad.  IMG_3277

Lastly, I made a quick vinaigrette with honey, dijon mustard, balsamic vinegar, salt & pepper and olive oil.  You could also simply add balsamic vinegar and olive oil.
